I leave out the honey, and ferment for 3-5 days, and I will use it right away.  I drain off some whey each time I get buttermilk, and just keep it in a jar in the refrigerator.

Want curry ketchup?  Add your favorite curry powder to it.  How much?  Keep tasting it.  When it tastes righht to you, by golly that will be how much!

Add some hot sauce and Worcestershire sauce to make it into what I love on oysters.

Add cinnamon and clove powders to make it more Christmassy.

Maybe you will want to try pumpkin spice in it.  I’m not that brave.

We keep ours in a nice jar in the refrigerator, and serve it with a spoon.  It is thick and oh so yummy!

So so good!  Very easy!
